Meals in Review

Okay, my meal plan went to shit this week. It was all going so well until I made Overnight Oats. This wasn't my first time making Overnight Oats, but it may very well have been the first since I've lived in Victoria. Most of our appliances are a little off. For example, our dryer eats our underwear. Our fridge is very, very cold, even when it's as warm as it can go (I dread the thought of how much energy it chews up). We used to have a glass pitcher of water in the fridge at all times, but had to stop using it because it would turn into an ice block. Well I forgot about this and left my Overnight Oats uncovered in the fridge... and they turned out like this:

It was a bummer to say the least. I flipped it over to the underside and scraped off the pieces that weren't frozen. They were very tasty. Double bummer.

I made pancakes twice this week. I had planned on making them once, which are pictured below. Those babies are Blueberry Cocoa Vegan Pancakes smothered in natural organic peanut butter. They were delish and relatively low calorie and low-fat. Another morning I was feeling pretty blah and had neglected to eat anything even close to substantial the day before... So instead of waiting a half hour for my steel cut oats to cook, I made more pancakes. Banana Oatmeal Pancakes. They were even better than the blueberry ones and I didn't have to put anything on them. They were so good that I didn't even manage to snap a photo before devouring them.

I've really been enjoying eating egg wraps lately. They're quick and easy to make and I love having fruit on the side. I had two of those this week... and since I finished all of my almond milk in my smoothie today I'll be having another one of these babies tomorrow. Yum.

I had some pretty yummy dinners this week too, but I seem to always neglect to take photos of supper. My favorites were Wild Rice with Shallots and Cranberries, and Roasted Broccoli with Peanut Sauce and baked yams on the side. I had that two days in a row, and I think that I'll make the rice again tomorrow. Hey, I had may as well keep it consistent until the week ends.

Meal planning this week was only half efficient. I managed to only have to go to the grocery store once this week, which is what I was hoping meal planning would do. My ability to follow along with what I'd planned did not really happen though. It's a good start!
